The history.

It all started at a bar, of course, but actually, all three of us were behind the counter. Perhaps that’s why it didn't just stop at talking, as we soon began to test ideas and recipes in a kitchen in Nørrebro. We started out with a New England IPA, and like so many others, we had a fondness for Citra and Mosaic hops (we still do). Our first beer ended up being the proof of this, in the form of 'Haze of the Rising Sun'.

However, we also glanced at the slightly more overlooked types of beer (we still do), which can be seen when we make a Brown Ale, a Vienna Lager, or a West Coast IPA.

Over time, the three Caspers became two, and we began to flex our muscles further. Barrels were purchased (they still are) and we discovered both the joy and the nervousness of barrel-aged beer.

Music always roared when brewing took place (it still does), which is why all beers are named after a musical track. Thus, today you can drift away with a 'Soul Swimming', take a turn with 'The Greatest Dancer', or simply just enjoy a 'Picnic at Kastellet'.
